Philip Tolman at La Guava booth at SIAL China 2011- Shanghai

Philip travelled to Shanghai China in May after his visit to Canada. Unfortunately the guava products which were shipped from Mexico were not released by customs in China but Philip had taken some extra samples in his luggage. The products were well received and an invitation was received for a return visit later this year. The support of ProMéxico is appreciated.

Where in the world are we?

Our facilities are located in a beautiful valley just outside the city of Tepic, Nayarit, Mexico. The fertile ground is ideal for a variety of crops and we have a large number of fruit trees on our property. We buy guavas from local farmers and all aspects of our operation provide economic opportunies for area residents.

This is the area where guava seedlings are grown and eventually sold to local farmers.
Women from the nearby village sort and prepare fruit for processing.
Bins of our product are ready for distribution.

Baked Salmon with Walnut-Guava Crust

This recipe features the guava salad dressing and marinade found by following this link (recipe#1).

Ingredients:

2 salmon steaks or fillets (6 oz)
1/2 cup guava marinade
1/3 cup chopped walnuts (or other nut of choice)
salt or soy sauce (optional)

Spread marinade on both sides of the salmon and let it sit for 30 minutes. If you want a saltier flavour, sprinkle salt or soysauce on fish before coating with marinade. Place fillets on a foil covered baking tray and place walnut crumbs in top of the marinade. Bake in toaster oven or regular oven at 400F for 15-20 minutes until fish flakes easily. You may have to cover the top of the fish lightly with foil if it is getting too dark, especially in the toaster oven.
